Yesterday as my stomach complained about being malnourished and my body lazily disagreed while my mind frantically catalogued what food was readily available, I stumbled upon a fantastically easy quick snack fix.  With whole wheat crackers on hand, armed with a slab of mozerella and a jar of salsa – you can whip up this delicious snack in just 30 seconds.  Ask Tracy, she had two plates of these yesterday.
