Bite-sized Pancakes

My children aren’t big fan of pancakes - especially if you make them your standard pancake size (the size of an average plate).  I think it’s too starchy for them and it isn’t sweet enough.  I am not prone to drenching their pancakes in maple syrup though, so my challenge:

a.  How to use up the remainder of my pancake mix
b.  How to get my kids to enjoy pancakes more
c.  Put a variety of breakfast ideas on the table (rather than their staple oatmeal)

I decided to make bite-sized pancakes with a raisin in the middle.  It turns out - THEY LOVED IT!  Each one was unique and they could just pop it into their mouths.  I made about 40 of these little grabbers and my kids left only around 7 of them (3 for daddy and 4 for the helper).  I must say though, it’s not an easy task to do and if you don’t want to burn them, you have to do it on relatively low heat with constant supervision.  Regardless, a task well worth the trouble if my kids ate so many!!  Try it - it’s cute!
